  • 2 lbs boneless, skinless chicken breasts About 3-4 breasts
  • 1 medium yellow onion, diced
  • 3 cups frozen mixed vegetables Mix of peas, carrots, corn, and green beans
  • 3 cloves garlic, minced
  • 2 cans cream of chicken soup 10.5 oz each
  • 1 cup low-sodium chicken broth
  • 1 tsp poultry seasoning
  • 1/2 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp kosher salt Or to taste
  • 1/2 cup heavy cream or half-and-half
  • 1 can refrigerated biscuit dough 16 oz, cut into quarters
  • 2 tbsp fresh parsley, chopped Optional, for garnish

Instructions
 

Preparation

  • Place the chicken breasts in the bottom of your crock pot, spreading them out evenly.
  • Sprinkle the diced onion and minced garlic on top.
  • Add the frozen mixed vegetables to the pot.
  • In a separate medium bowl, whisk together the cream of chicken soup and chicken broth. Add the poultry seasoning, thyme, black pepper, and salt.
  • Pour the creamy mixture over the chicken and vegetables in the crock pot.
  • Cover the pot and cook on LOW for 6 hours or on HIGH for 3 to 4 hours until the chicken is fork-tender.

Cooking

  • Once the chicken is cooked, carefully remove it from the crock pot and shred it with two forks.
  • Return the shredded chicken to the pot and stir in the heavy cream or half-and-half.
  • Cut the refrigerated biscuit dough into quarters and sprinkle the pieces on top of the chicken and sauce mixture.
  • Cover the pot again and cook on HIGH for an additional 45-60 minutes until the biscuits are completed puffed and golden brown.

Serving

  • Ladle the chicken pot pie into bowls and garnish with fresh parsley if desired.
  • Serve as is or with a simple green salad and crusty bread.

Notes

For quicker preparation, rotisserie chicken can be used instead of raw chicken breasts. Feel free to customize the vegetables used or the seasoning for more flavor.
