Preparation

  • Heat the olive oil in a skillet over medium heat.
  • Add the diced onion and minced garlic, sautéing until softened and fragrant (about 5-7 minutes).
  • Transfer the onion and garlic mixture to the slow cooker.
  • Pour in the diced tomatoes and vegetable broth into the slow cooker.
  • Season with salt and pepper to taste.
  • Set the Crock Pot to cook on low for 6 to 8 hours.
  • In the final hour, add the fresh basil leaves.
  • Once cooking is complete, blend with an immersion blender for a smooth texture or stir for a chunkier soup.
  • Serve hot, with optional crusty bread on the side.

Notes

Store leftovers in airtight containers in the fridge for up to 5 days, or freeze for up to 3 months. Reheat thoroughly before serving again.
