  • 1 pound chicken breast, diced Fresh chicken breasts recommended for best flavor
  • 4 cups chicken broth
  • 8 ounces fettuccine or pasta of choice Feel free to use whole wheat or gluten-free pasta
  • 1 cup heavy cream For a richer flavor; can substitute with milk for a lighter version
  • 1 cup grated Parmesan cheese Additional cheese can be added for cheese lovers
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • to garnish Chopped parsley

Instructions
 

Preparation

  • Dice the chicken breast into bite-sized pieces.
  • In the crockpot, add the diced chicken, chicken broth, garlic powder, onion powder, salt and pepper. Stir to combine.

Cooking

  • Cover the crockpot and set it to cook on low for 6-7 hours or on high for 3-4 hours.
  • About 30 minutes before serving, add the uncooked pasta and stir in the heavy cream.
  • Approximately 10 minutes before serving, stir in the grated Parmesan cheese until melted.

Serving

  • Ladle the soup into bowls and garnish with chopped parsley.

Notes

For a thicker soup, consider adding a cornstarch slurry towards the end of cooking. Customize with additional toppings like Parmesan or crushed red pepper.
