Preparation

  • Place the boneless, skinless chicken breasts in the slow cooker.
  • Pour in the can of diced tomatoes, ensuring to include the juices.
  • Add the chicken broth, diced onion, minced garlic, Italian seasoning, salt, and pepper.

Cooking

  • Set the crockpot to low and cook for 6 to 8 hours until the chicken is tender.
  • Remove the chicken and shred it using two forks.

Finishing Touches

  • Return the shredded chicken to the slow cooker.
  • Stir in the heavy cream, shredded mozzarella, and grated Parmesan cheese until melted.
  • Lightly toast the breadcrumbs until golden brown.
