Soup Base

  • 4 cups beef or chicken broth
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning Adjust to taste
  • Salt and pepper to taste

Main Ingredient

  • 1 pound Italian meatballs (frozen or homemade) No thawing needed if using frozen meatballs.

Garnish

  • Fresh parsley For garnish

Preparation

  • Wash and chop the carrots, celery, and onion into small pieces. Mince the garlic cloves.

Combining Ingredients

  • In a crockpot, combine the beef or chicken broth, diced tomatoes, and tomato sauce.
  • Add the chopped carrots, celery, and onion followed by the minced garlic.

Adding Meatballs

  • Introduce the meatballs (frozen or homemade) to the crockpot and stir to combine.

Seasoning

  • Season the mixture with Italian seasoning, salt, and pepper to taste. Add red pepper flakes for heat if desired.

Cooking

  • Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.

Serving

  • Check if the meatballs are cooked through and the vegetables are tender. Stir and serve hot.
  • Garnish each bowl with fresh parsley before serving.

Notes

For an extra layer of flavor, add grated Parmesan cheese on top. Pair with crusty bread or a side salad for a complete meal. Customize with additional vegetables or different seasonings as desired.
