Ingredients
  

Meat and Base

  • 1 pound Italian sausage (or ground beef) Opt for high-quality for best flavor.
  • 1 medium onion, chopped Freshly chopped for robust flavor.
  • 2 cloves garlic, minced Freshly minced is recommended.
  • 28 ounce can crushed tomatoes Can substitute with diced or whole tomatoes.
  • 2 cups vegetable or chicken broth Either works great for flavor.

Spices and Seasonings

  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Adjust to taste.

Noodles and Dairy

  • 8 ounces uncooked lasagna noodles, broken into pieces Breaking them allows for easier eating.
  • 15 ounce container ricotta cheese Stir in during last 30 minutes.
  • 2 cups shredded mozzarella cheese Sprinkle on top before serving.
  • ½ cup grated Parmesan cheese

Garnish

  • to taste Fresh parsley, for garnish Optional but recommended for freshness.

Instructions
 

Preparation

  • Cook the Italian sausage or ground beef in a skillet over medium heat until browned. Drain excess fat and transfer to the crockpot.
  • Add the chopped onion and minced garlic to the slow cooker.

Cooking

  • Pour in the crushed tomatoes and the vegetable or chicken broth, then add the dried basil, oregano, salt, and black pepper. Stir well.
  • Break the uncooked lasagna noodles into smaller pieces and gently mix them into the soup mixture.
  • Cover the crockpot and cook on low for about 6 to 8 hours, or on high for 3 to 4 hours.

Finishing Touches

  • About 30 minutes before serving, stir in the ricotta cheese.
  • Sprinkle shredded mozzarella cheese on top of the soup.

Serving

  • Once cooked, give the soup a gentle stir and taste to adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

For leftovers, store in an airtight container in the refrigerator for up to 4 days. Freezes well for up to 3 months. Optional: set up a topping station with extra cheese and herbs.
