  • 4 cups diced potatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or milk For a lighter option, use milk.
  • Salt and pepper to taste

Preparation

  • Wash and dice the potatoes, leaving the skins on for added texture if desired.
  • Chop the onion and mince the garlic.

Cooking

  • In your crockpot, combine the diced potatoes, chopped onions, and minced garlic.
  • Pour in the vegetable broth, making sure the vegetables are fully submerged.
  • Cover the crockpot and set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • Check the potatoes for tenderness; they should be easily pierced with a fork.
  • Once cooked, remove the lid and partially mash the potatoes with a potato masher to thicken the soup.
  • Stir in the heavy cream or milk and season with salt and pepper to taste.

Serving

  • Ladle generous portions into bowls and allow diners to add their favorite toppings.

Notes
