  • 1 pound gnocchi
  • 1 cup sun-dried tomatoes, chopped
  • 4 cups vegetable broth Use homemade for better flavor if possible.
  • 1 cup coconut milk or almond milk
  • 3 cloves garlic, minced

  • 2 cups spinach or kale, roughly chopped Can substitute with other greens.
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon Italian herbs

Preparation

  • Heat the olive oil in a large pot over medium heat until shimmering.
  • Add the chopped onions and minced garlic, sautéing for about 3 to 4 minutes until the onions are translucent.
  • Stir in the chopped sun-dried tomatoes and cook for a few more minutes to release their flavor.
  • Pour in the vegetable broth and bring it to a gentle simmer.
  • Add the gnocchi to the simmering broth and cook according to the package instructions, usually about 2 to 4 minutes.
  • Once the gnocchi are cooked, stir in the coconut milk or almond milk.
  • Add the chopped spinach or kale and let it wilt for 2 to 3 minutes.
  • Season with salt, pepper, and Italian herbs to taste.
  • Serve the soup hot and enjoy the aroma.

Notes

For a thicker soup, let it simmer longer after adding the milk. You can also add chickpeas or white beans for extra protein. Experiment with different greens and plant-based milks for variety.
