  • 0.5 cup unsweetened cocoa powder
  • 1.5 teaspoons ground ginger Fresh spices recommended
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking powder
  • 0.5 cup molasses Rich flavor
  • 0.5 cup semisweet chocolate chips
  • 0.5 cup chopped crystallized ginger For added texture

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish. Line it with parchment paper, allowing some paper to hang over the edges for easy removal.
  • In a medium saucepan, melt the butter over medium heat. Once melted, remove from heat and stir in both the granulated sugar and dark brown sugar until smooth.
  • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • In a separate bowl, sift together the all-purpose flour, cocoa powder, ground ginger, cinnamon, cloves, nutmeg, salt, and baking powder.
  • Gradually mix the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  • Fold in the molasses, chocolate chips, and chopped crystallized ginger until evenly distributed.
  • Pour the batter into the prepared baking dish and spread evenly. Bake in the preheated oven for 30-35 minutes.

Cooling and Serving

  • Remove the brownies from the oven and let them cool completely in the pan on a wire rack.
  • Once cooled, use the parchment paper to lift them out carefully and cut them into squares.
  • Serve with powdered sugar, chocolate sauce, vanilla ice cream, or whipped cream.

Notes

Store leftovers in an airtight container at room temperature for up to four days. For longer storage, freeze wrapped brownies for up to three months.
