  • 1 cup brown sugar, packed

  • 2 teaspoons vanilla extract

Dry Ingredients

  • 1/3 cup cocoa powder
  • 1 teaspoon espresso powder Optional for enhanced flavor.
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Chocolate Chips

  • 1 cup chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, beat the room-temperature butter and packed brown sugar together until light and fluffy, about 2-3 minutes.
  • Add in the egg and vanilla extract, and mix until well combined.

Mixing Ingredients

  • In a separate bowl, combine the cocoa powder, espresso powder (if using), flour, baking soda, and salt.
  • Gradually incorporate the dry mixture into the wet ingredients, mixing until just combined.
  • Gently fold in the chocolate chips using a spatula or wooden spoon.

Baking Cookies

  • Use a cookie scoop or a tablespoon to drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for approximately 11 minutes, until edges appear firm.
  • Remove from the oven and cool on the baking sheet for about 10 minutes before transferring to a wire rack.

Notes

For variation, try adding nuts, mint flavor, or using dark chocolate chips. Store in an airtight container for freshness.
