Instructions

Preparation

  • Cook the sushi rice according to package instructions, preferably using a rice cooker, and allow it to cool slightly.
  • In a small bowl, mix together mayonnaise and sriracha sauce to make the spicy mayo. Adjust the sriracha to your desired spice level.

Rolling the Sushi

  • Lay a bamboo sushi mat on your work surface with a sheet of nori on top, shiny side down.
  • Moisten your hands and grab a handful of sushi rice, spreading it evenly across the nori while leaving a small border at the top.
  • In the center of the rice, layer the cooked shrimp, sliced avocado, and julienned cucumber. Drizzle some spicy mayo over the fillings.
  • Roll the nori away from you using the bamboo mat, pressing gently but firmly to keep it tight. Moisten the edge of the nori to seal.
  • Use a sharp knife to slice the roll into bite-sized pieces, cleaning the knife with a damp cloth between cuts.

Serving

  • Arrange the sliced rolls on a platter and serve with soy sauce, wasabi, and pickled ginger.
  • Consider serving with a side salad or sprinkle sesame seeds over the rolls for added texture.

Notes

To store leftovers, wrap tightly in plastic wrap to prevent drying out. These can be kept in the refrigerator for up to a day.
