Biscuit Base

  • 1 cup Greek yogurt
  • 1 cup rolled oats
  • 2 large eggs
  • 1 teaspoon baking powder Helps the biscuits rise
  • ½ teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine Greek yogurt, rolled oats, and eggs, stirring until smooth.
  • Add baking powder and salt to the mixture, and stir until fully incorporated.
  • If desired, mix in honey or maple syrup for sweetness.
  • Shape the mixture into small biscuits on the prepared baking sheet, leaving space between them.

Baking

  • Bake for 15 to 20 minutes until golden brown. Allow them to cool slightly before serving.

Notes

For creative serving ideas, enjoy them warm with nut butter, drizzle with honey, or top with fresh fruit. They can also be served with scrambled eggs or made into mini breakfast sandwiches. If you like a chewier texture, soak the oats in yogurt for a few minutes before mixing.
