For the Peppers

  • 1/2 lb mini sweet peppers Choose firm and vibrant peppers.

For the Cheese Filling

  • 1/4 cup fat-free feta cheese
  • 2 wedges light Laughing Cow cheddar cheese
  • to taste everything bagel seasoning Adjust according to preference.
  • 1/2 tsp chili crunch Adds a delightful kick.
  • 1 tbsp oil Drained.

Optional Garnishes

  • Green onions or fresh herbs (like parsley or cilantro) For garnish.

Preparation

  • Slice the mini sweet peppers in half lengthwise and remove the seeds.
  • In a small bowl, combine the fat-free feta cheese and the light Laughing Cow cheddar cheese wedges.
  • Microwave the cheese mixture for about 30 seconds to soften.
  • Add everything bagel seasoning and chili crunch to the softened cheese mixture and mix thoroughly.
  • Stuff the pepper halves generously with the cheese mixture.

Serving

  • Place the stuffed peppers on a serving platter or sheet pan.
  • Garnish with chopped green onions or fresh herbs if desired.
  • Serve immediately while fresh, or allow to sit for a few minutes.

Notes

Leftover peppers can be stored in an airtight container in the refrigerator for 3 to 5 days. They can be eaten cold or warmed up in the microwave, but be cautious not to overheat.
