For the Cookie Dough

  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour Use the spoon-and-level method for measuring.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped fresh or canned cherries (pitted) Thaw and drain if using frozen cherries.
  • 1 cup chocolate chips (optional) Adds a chocolatey touch if desired.

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the chopped cherries and chocolate chips if using, ensuring even distribution throughout the dough.
  • Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 12 to 15 minutes or until the edges turn golden while the centers remain soft.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a chewier cookie, consider chilling the dough for 30 minutes before baking. You can also experiment with different mix-ins like nuts or oats.
