  • 1 tablespoon olive oil
  • 1 pound lean ground beef or ground turkey
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 24-ounce jar marinara sauce
  • 4 cups low-sodium chicken broth
  • 1 15-ounce can crushed tomatoes
  • 8 pieces lasagna noodles, broken into pieces
  • 0.5 cup heavy cream
  • 0.5 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • to taste Fresh basil or parsley, chopped For garnish
  • to taste Extra Parmesan cheese for topping

Instructions
 

Preparation

  • Heat 1 tablespoon of olive oil in a large soup pot or Dutch oven over medium-high heat.
  • Add 1 pound of lean ground beef or turkey and cook until browned, breaking it up with a wooden spoon. Drain excess fat, leaving about a tablespoon.
  • Add 1 small diced yellow onion and cook for 3 to 4 minutes until translucent.
  • Stir in 3 minced garlic cloves, cooking for an additional 30 seconds until fragrant.

Cooking

  • Add 1 teaspoon of Italian seasoning and optionally, 0.5 teaspoon of crushed red pepper flakes, 1 teaspoon of salt, and 0.5 teaspoon of black pepper.
  • Pour in 1 (24-ounce) jar of marinara sauce, 4 cups of low-sodium chicken broth, and 1 (15-ounce) can of crushed tomatoes. Stir well and bring to a gentle boil.
  • Reduce heat to medium-low and let the soup simmer uncovered for 15 to 20 minutes.
  • Add the broken lasagna noodles and cook for about 10 to 12 minutes, stirring occasionally until tender.
  • Stir in 0.5 cup of heavy cream, 0.5 cup of ricotta cheese, 1 cup of shredded mozzarella cheese, and 0.25 cup of grated Parmesan cheese until melted and creamy.

Serving

  • Ladle into bowls and garnish with chopped fresh basil or parsley and extra Parmesan cheese. Serve with garlic bread or a fresh salad.

Notes

For a lighter version, reduce the amount of heavy cream or substitute with half-and-half. Customize with veggies or different pasta as preferred.
