Ingredients
  

Meat

  • 1 pound ground beef
  • 1/2 pound Italian sausage (mild)

Vegetables

  • 1 cup onion, chopped
  • 1 1/2 cups green bell pepper, chopped
  • 1 cup red bell pepper, chopped
  • 3 cloves garlic, minced

Canned Goods

  • 1 28 ounce can diced tomatoes, undrained
  • 14 ounces tomato sauce
  • 4 cups beef broth or more for a thinner consistency

Rice

  • 1 cup cooked brown rice or cauliflower rice

Seasonings

  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Preparation

  • Brown the ground beef and Italian sausage in a skillet over medium heat until no longer pink; drain any excess fat.
  • Chop the onion, green bell pepper, and red bell pepper; mince the garlic.

Cooking

  • In a crockpot, combine the browned meat, chopped onions, bell peppers, and minced garlic.
  • Add the undrained diced tomatoes, tomato sauce, and beef broth.
  • Sprinkle in the Italian seasoning, onion powder, salt, and pepper; stir to combine.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, stir in the cooked brown rice or cauliflower rice.
  • Taste and adjust seasonings as desired before serving.

Notes

For extra flavor, garnish with fresh herbs, serve with bread, add sour cream, or cheese toppings. Can substitute with ground turkey or chicken for a lighter option.
