For the Frosting

  • 1 cup cream cheese, softened Use dairy-free cream cheese for a dairy-free option.
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

For Topping

  • Assorted fresh fruits (e.g., strawberries, blueberries, kiwi, banana) Customize according to preference and season.
  • Optional mint leaves for garnish Adds a pop of color and freshness.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Roll the dough into ball shapes, about 1 tablespoon in size, and place them on the prepared baking sheet, spacing them a few inches apart.
  • Slightly flatten each ball to form a disc shape.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the edges start to turn golden brown.
  • Remove from the oven and let cool completely on a wire rack.

Frosting and Topping

  • In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Once the cookies are fully cooled, spread a generous layer of the cream cheese mixture on each cookie.
  • Top the frosted cookies with your choice of assorted fresh fruits, arranging them in an appealing way.

Notes

Store cooled cookies without frosting at room temperature for up to three days. Room temperature butter and cream cheese lead to better texture. For longer storage, freeze plain cookies up to two months.
