Preparation

  • Melt the butter in a large pot over medium heat.
  • Add chopped onion and sauté until translucent, about 3-4 minutes.
  • Stir in diced potatoes and ham, cooking for a few minutes to blend flavors.
  • Pour in chicken broth and bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  • Add milk and stir to combine. Season with salt and pepper.
  • Allow to heat through for an additional 5 minutes.

Notes

For a thicker soup, use fewer potatoes or add more milk. Leftovers can be stored in the refrigerator for up to three days or frozen for longer storage.
