Ingredients
  

Fritter Batter

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 1 cup milk
  • 2 large eggs
  • 2 cups peeled, diced apples (preferably tart varieties like Granny Smith)
  • Oil for frying About 2-3 inches of oil in a deep skillet
  • Powdered sugar for dusting (optional)

Preparation

  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, cinnamon, and sugar until well mixed.
  • In a separate bowl, whisk together the milk and eggs.
  • Slowly pour the wet ingredients into the bowl with the dry ingredients. Mix gently until just combined.
  • Fold in the diced apples until evenly distributed.

Cooking

  • In a deep skillet or pot, heat oil over medium heat.
  • Once the oil is hot, drop spoonfuls of the batter into the oil. Fry until golden brown, about 2-3 minutes on each side.
  • Remove the fritters from the oil and let them drain on paper towels.
  • Dust with powdered sugar before serving if desired.

Notes

For variety, you can incorporate nuts, use a glaze instead of powdered sugar, or substitute other fruits. Keep an eye on the oil temperature to prevent greasiness. Store leftover fritters in an airtight container at room temperature for up to two days.
