Ingredients
  

Soup Base

  • 1 lb ground beef Quality ingredients are recommended.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Use high-quality broth for better flavor.
  • 1 can (15 oz) crushed tomatoes Ensure it is well-seasoned.

Noodles and Cheese

  • 8 oz lasagna noodles, broken Can use whole wheat or gluten-free options.
  • 2 cups ricotta cheese Increase for a cheesier version.
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese For serving additional grated Parmesan at the table.

Seasoning

  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • Fresh basil for garnish Enhances both flavor and presentation.

Preparation

  • In a large pot over medium heat, add ground beef, chopped onion, and minced garlic. Cook until the beef is thoroughly browned, about 5-7 minutes, then drain excess fat.
  • Pour in chicken broth and crushed tomatoes. Sprinkle in Italian seasoning and season with salt and pepper. Bring the mixture to a boil.

Cooking

  • Add broken lasagna noodles to the pot and let simmer for about 10-12 minutes until the noodles are tender but still have some bite.
  • In a separate bowl, combine ricotta cheese with half of the shredded mozzarella and the grated Parmesan for a cheesy topping.

Serving

  • Ladle soup into bowls and add a generous spoonful of the ricotta mixture on top. Sprinkle remaining mozzarella cheese over the top.
  • Garnish with chopped basil before serving.

Notes

Serve with crusty bread or a light salad for a complete meal. Store leftovers in airtight containers; refrigerate for up to 3 days or freeze for up to 3 months.
