Ingredients
  

For the soup base

  • 2 cups cooked turkey, shredded Use leftover turkey for best flavor
  • 4 cups chicken broth Low sodium broth recommended
  • 1 cup carrots, diced Fresh carrots work best
  • 1 cup celery, diced Adds crunch and flavor
  • 1 cup onion, chopped Sweet or yellow onions recommended
  • 2 cloves garlic, minced Enhances flavor

Herbs and Seasonings

  • 1 teaspoon dried thyme Can substitute with fresh thyme
  • 1 teaspoon dried rosemary Can substitute with fresh rosemary
  • to taste Salt and pepper Adjust according to preference

Vegetables

  • 1 cup frozen peas Adds color and sweetness
  • 1 cup corn (optional) Can be omitted or substituted
  • 2 tablespoons olive oil For sautéing the vegetables

Instructions
 

Preparation

  • Heat a large pot over medium heat, then add the olive oil.
  • Once hot, add the chopped onion, diced carrots, diced celery, and minced garlic. Stir occasionally and cook for 5-7 minutes until tender.

Cooking

  • Add the shredded turkey, chicken broth, dried thyme, and dried rosemary to the pot. Season with salt and pepper to taste.
  • Bring to a boil, then reduce the heat and let simmer for 20-25 minutes.
  • Stir in the frozen peas and corn (if using). Cook for an additional 5 minutes until warmed through.

Serving

  • Ladle the warm soup into bowls and optionally garnish with fresh herbs or Parmesan cheese.

Notes

For added creaminess, use an immersion blender for a few seconds. Adjust seasonings during cooking for a balanced flavor.
