  • 4 pieces Flour tortillas (8-inch)
  • 1 pound Ground beef (or chicken/tofu)
  • 1 cup Refried beans
  • 1 cup Shredded cheese (cheddar or Monterey Jack)
  • 1 cup Salsa (store-bought or homemade)
  • 1 cup Fresh bell peppers, diced
  • 1 cup Fresh onions, diced
  • ½ cup Fresh jalapeños, diced

Spices and Seasonings

  • to taste Salt
  • to taste Pepper
  • to taste Garlic powder
  • to taste Cumin
  • to taste Chili powder

Optional Ingredients

  • as needed Melted butter for brushing Optional for extra flavor

Instructions
 

Preparation

  • Heat a skillet over medium heat and add the ground beef (or chicken/tofu). Break it up with a spatula while cooking. Season with salt, pepper, garlic powder, cumin, and chili powder. Cook until the meat is no longer pink and drain any excess fat.
  • Warm the flour tortillas in a dry pan or oven until soft and pliable.

Assembly

  • Spread a layer of refried beans across the center of each tortilla. Add the cooked ground beef mixture and sprinkle shredded cheese on top.
  • Add diced bell peppers, onions, and jalapeños. Roll the tortilla tightly while tucking in the sides to prevent spilling.
  • Place the rolled burrito seam-side down on a baking sheet lined with parchment paper. Optionally brush with melted butter.

Baking

  • Preheat the oven to 375°F (190°C). Bake the burritos for about 15-20 minutes until golden and crisp.

Serving

  • Let them cool slightly before slicing in half. Serve with salsa, guacamole, or sour cream.

Notes

You can customize the fillings to your liking, and they are perfect for meal prep. Store leftovers wrapped tightly for up to three days in the fridge or freeze for up to three months.
