  • 4 cups vegetable broth

Preparation

  • Peel and dice the potatoes, chop the onions, and mince the garlic.

Cooking

  • Melt the butter in a large pot over medium heat, then add the chopped onions and minced garlic. Sauté until the onions become translucent.
  • Add the diced potatoes to the pot along with the vegetable broth and bring to a boil.
  • Once boiling, reduce the heat to a simmer. Cover the pot with a lid and cook for about 20 minutes until the potatoes are fork-tender.
  • Blend the soup with an immersion blender until desired smoothness is achieved.
  • Stir in heavy cream if desired, and season with salt and pepper to taste.

Serving

  • Ladle the soup into bowls and serve hot, garnished with fresh chives or cheese.

Notes

For variations, consider adding shredded cheese, additional vegetables, or fresh herbs. This soup can be made ahead and stored in the refrigerator for 3-5 days or frozen for up to 3 months.
