For the Cookies

  • 1 box red velvet cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs room temperature
  • 1 cup chocolate chips optional
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting optional

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the red velvet cake mix, vegetable oil, and eggs. Mix until well blended.
  • Stir in the vanilla extract and mix again. If you're adding chocolate chips, fold them in now.

Baking

  • Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet. Leave some space between each cookie, as they will spread a little while baking.
  • Bake in the preheated oven for 10 to 12 minutes. Keep an eye on them to ensure they don’t overbake.
  • Once they start to look set, remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  • If desired, dust with powdered sugar before serving.

Notes

For chewier cookies, chill the dough for about 30 minutes before baking. You can also experiment with different mix-ins like nuts or white chocolate chips. Adjust sweetness by reducing sugar in frosting or skipping powdered sugar dusting.
