Ingredients
  

Dry Ingredients

  • 1 cup einkorn flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup butter, softened Must be at room temperature
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg Must be at room temperature

Additional Ingredients

  • 1 cup dark chocolate chips Can use semi-sweet or bittersweet

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the einkorn flour, baking soda, and salt. Set aside.
  • In another bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 2-3 minutes.
  • Beat in the vanilla extract and egg until well combined.
  • Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  • Fold in the dark chocolate chips.

Baking

  • Drop spoonfuls of dough onto a parchment-lined baking sheet, leaving space between each dollop.
  • Bake for 10-12 minutes, or until the edges are slightly golden. Let cool on the baking sheet before transferring to a wire rack.

Notes

Serve warm with a glass of milk or coffee. For a variation, add nuts, oats, coconut, or spices for different flavors. Store in an airtight container for up to a week or freeze for up to three months.
