Main Ingredients

  • 2 cups cooked chicken breast, shredded or cubed Use leftover chicken to reduce waste.
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 oz block cream cheese, softened
  • 1 packet fajita seasoning mix (or 2 tablespoons homemade fajita seasoning)
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers; sauté for about 5 minutes until tender.
  • Add the cooked chicken and sprinkle with fajita seasoning. Stir to coat chicken and vegetables.
  • In a mixing bowl, combine sour cream, softened cream cheese, half of the cheddar cheese, and half of the Monterey Jack cheese. Mix until smooth.
  • Fold the chicken and pepper mixture into the creamy mixture until well integrated.
  • Transfer the mixture into a greased 9x13-inch baking dish and spread evenly.
  • Top with the remaining cheddar and Monterey Jack cheese.

Baking

  • Bake uncovered in the preheated oven for 20-25 minutes until golden brown and bubbly.
  • Let it rest for 5 minutes before serving.

Notes

Serve garnished with cilantro, jalapeños, or salsa. Can be accompanied by a salad or tortilla chips. Prep ingredients ahead of time for convenience.
