Ingredients
  

For the filling

  • 1 pound breakfast sausage Use high-quality sausage for best flavor.
  • 6 large eggs Organic or free-range eggs are recommended.
  • 1 cup shredded cheddar cheese Feel free to use a blend of cheeses for added flavor.
  • 1 ripe avocado, sliced Add fresh avocado for creaminess.
  • 1 cup salsa Choose mild or hot according to preference.
  • to taste hot sauce Optional, for extra spiciness.
  • 4 large flour tortillas Warm them before filling.

Instructions
 

Cooking the Filling

  • Heat a skillet over medium heat. Add the breakfast sausage and cook for 6-8 minutes until golden brown and crispy.
  • In a bowl, whisk the eggs until combined. Push the cooked sausage to the side and pour the eggs into the empty side of the skillet.
  • Let the eggs cook undisturbed for a minute, then stir gently to scramble until fluffy.
  • Sprinkle shredded cheddar cheese over the eggs and allow it to melt into the mixture.

Assembling the Burrito

  • Warm the tortillas in a pan for 30 seconds on each side or wrap them in a damp paper towel and microwave for 20 seconds.
  • Place a scoop of the sausage and egg mixture in the center of a warm tortilla. Top with avocado slices, salsa, and hot sauce.
  • Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Repeat for each burrito.

Serving

  • Serve the burritos warm, optionally garnished with extra salsa or chopped cilantro.
