  • 2 pieces chicken breasts Boneless and skinless
  • 2 tablespoons chipotle sauce For marinating chicken
  • 1 cup cooked rice Use white or brown rice
  • 1 can black beans Rinsed and drained
  • 1 cup shredded cheese Cheddar or your preferred cheese
  • 1 piece avocado Sliced for topping
  • 1 cup salsa For flavor enhancement
  • 4 large flour tortillas Use large for better wrapping
  • Salt and pepper to taste

Preparation

  • Marinate the chicken breasts in chipotle sauce for at least 30 minutes, preferably several hours or overnight.
  • Heat a pan over medium heat and cook the marinated chicken for about 7-8 minutes on each side until fully cooked.
  • Let the chicken rest for a few minutes, then shred or chop it into bite-sized pieces. Mix with salt and pepper.

Assembly

  • Lay a large flour tortilla flat on a surface.
  • Spoon cooked rice onto the center, then add black beans, shredded chicken, cheese, sliced avocado, and salsa.
  • Fold the sides inward and roll from the bottom to secure the filling, placing seam-side down on a plate.

Serving

  • Serve burritos whole or sliced in half, with extra salsa, guacamole, and lime wedges on the side.

Notes

For versatile fillings, try sautéed bell peppers or corn. Ensure to warm tortillas to prevent tearing when rolling.
