  • 3/4 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (dark or semi-sweet) Feel free to experiment with different types of chocolate chips.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the almond butter, brown sugar, baking soda, and salt. Stir until smooth.
  • Add the egg and vanilla extract, stirring until well combined. The batter will be thick but cohesive.
  • Gently fold in the chocolate chips until they are evenly distributed.
  • Scoop out tablespoons of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 8-10 minutes until edges look set and tops slightly crack.
  • Remove from oven and let cool for 5 minutes before transferring to a wire rack to cool completely.
