  • 1 cup sugar (granulated or brown)
  • 1 large egg Can be substituted with a flax egg for a vegan version.
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the peanut butter, sugar, egg, baking soda, vanilla extract, and salt.
  • Stir until the mixture is smooth and fully combined.
  • Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about two inches apart.
  • Flatten each cookie slightly with a fork, creating a crisscross pattern on top.
  • Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For serving, pair with milk or coffee. To store, keep in an airtight container at room temperature for 3-5 days, or refrigerate for up to a week. Freeze for longer storage.
