Preparation

  • Preheat your oven to 350°F (175°C) and grease a muffin tin.
  • In a large bowl, combine rolled oats, diced apples, cinnamon, and baking powder.
  • In a separate bowl, whisk together milk (or almond milk), eggs, maple syrup (or honey), and vanilla extract until smooth.

Mixing

  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Avoid overmixing to keep the oatmeal cups fluffy.

Baking

  • Distribute the mixture evenly into the greased muffin tin, filling each cup almost to the top.
  • Bake for 20-25 minutes until the tops are golden brown and a toothpick comes out clean.
  • Allow to cool slightly in the tin before removing.

Notes

Serve warm, possibly topped with yogurt or nuts. These cups can be stored in the refrigerator for up to five days and frozen for up to three months.
