French Dip Tortilla Roll Ups

A delightful twist on the classic French dip sandwich, these bite-sized snacks feature roast beef, melted provolone cheese, and crispy French fried onions wrapped in a soft tortilla, served with a warm dipping sauce.

Ingredients
  

For the Roll Ups

  • 4 large flour tortillas, about 12 inches in diameter
  • 8 slices provolone cheese, thinly sliced Freshly sliced cheese melts better
  • 12 ounces deli roast beef, freshly sliced Opt for high quality for better flavor
  • 1 cup French fried onions, store-bought or homemade For extra crunch, consider homemade
  • 2 tablespoons extra virgin olive oil For brushing tortillas

For the Au Jus

  • 1 can beef consommé (10.5 ounces)
  • 1 cup water
  • 1 tablespoon Worcestershire sauce Adjust for stronger flavor if desired
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Line a rimmed baking sheet with parchment paper.
  • Lay one tortilla flat. Place two slices of provolone cheese over half of the tortilla.
  • Add approximately 3 ounces of freshly sliced roast beef on top of the cheese.
  • Add a generous handful of French fried onions on top.
  • Brush the inside edge of the tortilla with a light layer of extra virgin olive oil.
  • Starting from the filled end, tightly roll the tortilla, sealing in the fillings.
  • Press the oiled edge down to seal it. Place seam-side down on the baking sheet.
  • Repeat the process with the remaining tortillas.

Baking

  • Brush the tops and sides of the roll-ups with remaining olive oil.
  • Bake for 8–10 minutes, rotating halfway, until golden brown and cheese is bubbling.

Making the Au Jus

  • In a saucepan, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder.
  • Heat over medium, whisking to blend, until hot (3–4 minutes).

Serving

  • Allow roll-ups to cool for 2 minutes on a wire rack.
  • Carefully slice each roll into halves or thirds as preferred.
  • Serve immediately with warm au jus on the side.

Notes

For added crunch and flavor, consider using homemade French fried onions. Adjust au jus flavor with more Worcestershire or soy sauce based on personal preference. Allowing roll-ups to cool briefly aids in easier slicing.
