  • 4 pieces boneless, skinless chicken breasts
  • to taste Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 3 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon chopped fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Season the chicken breasts with salt and freshly ground black pepper.
  • In a large skillet, heat the olive oil over medium-high heat and cook the seasoned chicken breasts for about five minutes on each side until golden brown and cooked through.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the butter and melt it over medium heat.
  • Add the finely chopped onion and sauté for around four minutes until translucent.
  • Add the minced garlic and cook for an additional minute.
  • Pour in the chicken broth and scrape the bottom of the skillet to lift the browned bits.
  • Allow the broth to simmer for about three minutes.
  • Stir in the heavy cream, Dijon mustard, whole grain mustard, and fresh thyme leaves, and let it simmer for about five minutes until the sauce thickens slightly.
  • Return the chicken to the skillet and let it soak in the sauce for another five minutes.
  • If desired, sprinkle chopped fresh parsley over the top before serving.

Notes

You can serve this dish with fluffy rice, roasted vegetables, or a crisp salad. For added flavor, consider adjusting the mustard levels to your taste.
