  • 1.5 lbs boneless, skinless chicken breasts (about 3-4 pieces)
  • 2 medium yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup long-grain jasmine rice
  • 1 cup shredded Swiss cheese

Cooking Essentials

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and pepper to taste

Instructions
 

Caramelizing Onions

  • Warm a large skillet over medium heat. Add the butter and olive oil, allowing them to melt together. Add the thinly sliced yellow onions and cook, stirring occasionally, for about 15 minutes, or until they turn golden brown and fragrant.

Cooking Chicken

  • Add minced garlic to the skillet and sauté for another minute.
  • Push the onions and garlic to the side of the skillet and season the chicken with salt and pepper. Place the chicken breasts in the skillet and sear for about 5 minutes on each side until golden brown.

Combining Ingredients

  • Stir in the jasmine rice. Pour the chicken broth over the rice and chicken and bring to a gentle simmer. Scrape the bottom of the skillet to incorporate browned bits.
  • Once simmering, cover the skillet, reduce heat to low, and allow rice to absorb the flavors for 10 minutes.

Finishing Touches

  • Remove the lid and check rice. If fluffy and tender, sprinkle shredded Swiss cheese over the top, re-cover, and let melt for about 10 minutes.
  • Gently fold everything together and serve hot, garnished with fresh thyme if desired.

Notes

For an elevated serving, plate in shallow bowls and garnish with fresh herbs. Pair with a light salad or crusty bread.
