Ingredients
  

For the Stuffing

  • 1 cup caramelized onions
  • 1 cup shredded Gruyère cheese
  • 1/2 cup cream cheese softened
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the Chicken

  • 2 large chicken breasts with pockets cut into them
  • Olive oil for cooking
  • Fresh thyme for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, add a splash of olive oil and cook the sliced onions until caramelized, about 20 to 30 minutes.
  • In a bowl, mix together caramelized onions, softened cream cheese, shredded Gruyère, garlic powder, salt, and pepper.
  • Cut a pocket into each chicken breast, being careful not to slice all the way through.
  • Fill each pocket generously with the onion and cheese mixture, and use toothpicks to secure them if needed.

Cooking

  • In the same skillet, heat olive oil and sear the chicken breasts on both sides until golden-brown, about 4 to 5 minutes per side.
  • Transfer the chicken to a baking dish and bake in the preheated oven for 20 to 25 minutes, or until cooked through with an internal temperature of 165°F (75°C).
  • Allow the chicken to rest for a few minutes before garnishing with fresh thyme and serving.

Notes

For best texture, ensure cream cheese is at room temperature. Secure openings with toothpicks to retain juices. Let chicken rest after baking for more flavorful bites.
