Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set this mixture aside.

Mixing

  • In a microwave-safe bowl, melt the butter until it is fully liquefied. Add the granulated sugar to the melted butter and stir until combined.
  • Allow the mixture to cool slightly, then add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; the dough should be thick and fudgy.
  • Fold in the chocolate chips and nuts if you are using them.

Baking

  • Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, leaving space between each cookie as they will spread.
  • Bake for about 10-12 minutes or until the edges look firm and the centers appear slightly underbaked.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be served warm, paired with milk or ice cream. They can also be stored in an airtight container for up to a week or frozen for up to three months.
