  • 1.5 lbs Yukon gold or red potatoes, cut into 1-inch pieces
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil (optional for browning) Optional, for enhanced flavor
  • 2 tablespoons chopped fresh parsley (for garnish) Adds color and flavor

Preparation

  • Cut the chicken into bite-sized chunks and slice the potatoes into 1-inch pieces.
  • Optionally, brown the chicken in a skillet with olive oil over medium-high heat until golden.

Cooking

  • Transfer the chicken and potatoes into the crockpot.
  • In a separate bowl, mix together heavy cream, Parmesan cheese, minced garlic, Italian seasoning, paprika, and a dash of salt and black pepper until well combined.
  • Pour the sauce over the chicken and potatoes, ensuring everything is evenly coated.
  • Cover the crockpot and set it to cook on low for 6 to 7 hours or on high for 3.5 to 4 hours.
  • Once cooked, gently stir to mix all ingredients.
  • Garnish with fresh chopped parsley before serving.

Notes

Use fresh ingredients whenever possible for better flavor. Cut chicken pieces uniformly for even cooking. Adjust seasoning before serving and consider adding a cornstarch slurry for a thicker sauce if desired.
