Ingredients
  

For the cod

  • 4 pieces cod fillets (6 oz each)
  • 2 tablespoons fresh ginger, grated Always use fresh ginger for best flavor.
  • 1/4 cup low-sodium soy sauce Opt for low-sodium to balance the dish.
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 2 pieces green onions, chopped For garnish.
  • 1 tablespoon toasted sesame seeds Optional for garnish.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine the low-sodium soy sauce, honey, grated ginger, and lemon juice. Whisk together until smooth.
  • Place the cod fillets in a shallow dish and pour half of the marinade over them. Allow to marinate for 15 to 30 minutes.

Cooking

  • Arrange the cod fillets on a greased baking sheet and brush the remaining marinade over the fillets.
  • Bake in the preheated oven for 12 to 15 minutes, or until the cod flakes easily with a fork and is opaque.
  • If using sesame seeds, toast them in a skillet over medium heat until golden brown.
  • Once cooked, remove the cod from the oven and garnish with chopped green onions and sesame seeds. Drizzle any leftover glaze over the fish.

Notes

For extra flavor, pair with steamed vegetables or rice. Store leftovers in an airtight container for up to 3 days in the refrigerator, or freeze for up to 6 months.
