Ingredients
  

Truffle Base

  • 2 cups Crushed gingerbread cookies
  • 8 ounces Cream cheese, softened
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground cinnamon
  • ½ teaspoon Ground nutmeg

Coating and Topping

  • 8 ounces Melted chocolate (dark, milk, or white)
  • Festive sugar or additional spice for topping as needed

Preparation

  • Combine crushed gingerbread cookies and softened cream cheese in a mixing bowl. Blend until smooth, ensuring no lumps.
  • Add ground ginger, ground cinnamon, and nutmeg to the mixture. Mix until well incorporated.

Forming and Chilling

  • Roll small portions of the mixture into balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
  • Chill truffles in the refrigerator for about 30 minutes.

Coating

  • Melt chocolate in a microwave-safe bowl or double boiler. Dip each truffle into the chocolate until fully coated and allow excess to drip off.
  • While chocolate is soft, sprinkle truffles with festive sugar or additional spices.

Setting and Serving

  • Allow the truffles to set at room temperature, or refrigerate until the chocolate hardens.
  • Serve or store in an airtight container.

Notes

For best results, use quality chocolate and do not rush the chilling process. Variations include adding nuts or different flavorings.
