Ingredients
  

For the Marinade

  • 1/4 cup extra-virgin olive oil
  • 2 large lemons, juiced
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Kabobs

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes Choose high-quality chicken for best flavor.
  • 2 bell peppers (red and yellow), cut into chunks Feel free to use any favorite veggies.
  • 1 red onion, cut into wedges
  • 10 bamboo or metal skewers Soak bamboo skewers in water for 30 minutes if using.

Preparation

  • In a mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper.
  • Place chicken cubes in a large resealable bag or bowl and pour the marinade over, ensuring all pieces are well coated.
  • Seal the bag or cover the bowl and let the chicken marinade in the refrigerator for at least 30 minutes.

Grilling

  • Preheat the grill to medium-high heat.
  • While chicken is marinating, soak bamboo skewers in water.
  • After marinating, thread chicken onto the skewers, alternating with pieces of bell peppers and onion.
  • Place skewers on the preheated grill and cook for about 15-20 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F (75°C).

Serving

  • Remove kabobs from the grill and let them rest for a few minutes before serving.
  • Serve them on a platter or directly on the skewers, with tzatziki sauce and warm pita bread.

Notes

Marinate for longer than 30 minutes for more flavor. Substitute vegetables as desired.
