Ingredients
  

For the Marinade

  • 1 cup Greek yogurt (plain, full-fat)
  • 3 to 4 sprigs fresh dill
  • 1 unit shallot (minced)
  • 3 tablespoons minced garlic
  • 1 unit lemon (juiced and zested)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 tablespoon dried oregano

For the Chicken

  • 8 to 10 pieces boneless skinless chicken thighs Choose thighs for juiciness.

Preparation

  • Pat the chicken thighs dry with a paper towel to remove excess moisture.
  • In a medium mixing bowl, combine Greek yogurt, fresh dill, minced shallots, minced garlic, lemon juice, lemon zest, salt, pepper, paprika, and dried oregano. Mix until smooth.
  • Add the chicken thighs to the marinade and coat each piece thoroughly.
  • Cover the bowl with plastic wrap or a lid and refrigerate. Marinate for at least 1 hour, preferably overnight.

Grilling

  • Preheat the grill to about 400°F.
  • Remove the chicken from the refrigerator and discard any leftover marinade.
  • Place the chicken thighs on the grill, smooth side down, and cook for about 8 to 10 minutes without lifting them.
  • Flip the thighs halfway through grilling and close the grill lid.
  • Once cooked through and grilled, remove from heat and let rest for at least 5 minutes before serving.

Notes

Serve the chicken over rice or in wraps with fresh vegetables. You can adjust the seasonings to your preference for added heat or herbs.
