Bread and Base

  • 2 slices slices of whole-wheat bread

Main Ingredients

  • 1 medium avocado, sliced
  • 2 ounces mozzarella cheese, sliced
  • 1 small cucumber, thinly sliced
  • 1 cup lettuce leaves
  • 1 cup fresh spinach leaves
  • 3-4 tablespoons Green Goddess dressing homemade or store-bought

Instructions
 

Assembly

  • Start by taking one slice of whole-wheat bread and laying it flat on a clean cutting board or plate.
  • Spread a generous amount of Green Goddess dressing evenly across the surface of the bread.
  • Layer the sliced cucumber over the dressing.
  • Add the avocado slices on top of the cucumber.
  • Place the mozzarella cheese slices on top of the avocado.
  • Add a layer of fresh lettuce leaves.
  • Top with a generous handful of spinach leaves.
  • Place the second slice of whole-wheat bread on top and lightly press down to combine.
  • Slice the sandwich in half and serve immediately or wrap it up for later.

Notes

Serve with fresh fruit or a green salad. Wrap tightly to store leftovers and consume within 1-2 days.
