Ingredients
  

For the Marinade

  • 2 tablespoons paprika See note 1
  • 4 cloves garlic, crushed
  • 4 tablespoons fresh flat-leaf parsley, finely chopped See note 2
  • 1.5 teaspoons salt
  • 0.5 teaspoon ground black pepper
  • cup olive oil

For the Chicken

  • 1.5 to 1.7 pounds boneless chicken thighs (approximately 800 grams)

Preparation

  • In a mixing bowl or a Ziploc bag, combine the paprika, crushed garlic cloves, finely chopped parsley, salt, black pepper, and olive oil. Mix everything thoroughly until well combined.
  • Add the boneless chicken thighs into the marinade, ensuring each thigh is well-coated. Cover with cling film or seal the bag tightly and refrigerate for at least 30 minutes.

Grilling

  • Preheat your grill to medium-high heat.
  • Once the grill is ready, take the marinated chicken thighs out of the refrigerator and place them on the grill with enough space between each piece.
  • Grill for about 6-7 minutes on one side, until golden brown. Flip the chicken and cook for an additional 5-7 minutes.
  • Check that the internal temperature reaches 165°F (75°C) or that the juices run clear when pierced.
  • Let the chicken rest for a few minutes before serving.

Notes

For the best flavor, let the chicken marinate longer if possible. Use a meat thermometer for perfect doneness. Experiment with different marinades to suit your taste.
