Ingredients
  

For the Grilled Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil for coating chicken
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Avocado Salsa

  • 1 large avocado, diced choose ripe avocados
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lime juice to enhance flavor

Preparation

  • Pat the chicken breasts dry with paper towels.
  • Drizzle olive oil over both sides of the chicken breasts and rub it in.
  • In a small bowl, combine chili powder, garlic powder, ground cumin, paprika, salt, and black pepper.
  • Sprinkle the spice mix over the chicken breasts, rubbing it in to coat evenly.

Grilling

  • Preheat the grill to medium-high temperature.
  • Place the seasoned chicken on the grill and cook for 6-7 minutes on one side.
  • Flip the chicken and continue grilling for another 6-7 minutes, until the internal temperature reaches 165°F (75°C).

Prepare Avocado Salsa

  • Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon.
  • Dice the avocado and add it to a bowl with halved cherry tomatoes, red onion, cilantro, and lime juice.
  • Gently toss all the ingredients together to combine.

Serving

  • Remove the chicken from the grill and let it rest for a few minutes.
  • Slice the chicken against the grain into thin strips.
  • Serve the sliced chicken topped with avocado salsa.

Notes

For added garnish, serve with lime wedges and consider toppings like crumbled feta or hot sauce. Leftovers can be stored in the refrigerator for up to 3-4 days.
