Preparation

  • In a small bowl, whisk together the buffalo sauce, honey, and minced garlic. This will serve as both a marinade and a basting sauce.
  • Take your chicken thighs and generously season them with salt, black pepper, and dried parsley. Make sure to coat each side for a well-rounded flavor profile.
  • Pour 2 tablespoons of the honey buffalo sauce mixture over the seasoned chicken thighs, tossing them to ensure every piece is fully coated. Let it sit for a few minutes.

Grilling

  • Heat your grill to medium-low heat.
  • Once the grill is ready, place the chicken thighs on the grill with the smooth side down.
  • After about 3-4 minutes, carefully turn the chicken thighs over. Repeat this process every 3-4 minutes until the juices run clear and the internal temperature reaches 165-170 degrees Fahrenheit.
  • Baste the chicken with the honey buffalo sauce during the last few flips for added flavor.
  • Once fully cooked, remove the chicken thighs from the grill. Allow them to rest for a couple of minutes before serving.

Notes

Garnish with freshly chopped green onions to add color and flavor. These chicken thighs pair beautifully with sides like grilled vegetables or coleslaw. Experiment with additional spices or marinades for variety.
