Ingredients
  

For the Chicken Marinade

  • 1 pound boneless, skinless chicken thighs
  • ¼ cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons hot honey
  • 1 teaspoon freshly grated lemon zest
  • 1 clove garlic, minced
  • Kosher salt and freshly ground black pepper, to taste

For the Sweet Corn Salad

  • 6 ears sweet corn, kernels removed from the cob
  • 2 green onions thinly sliced
  • ¼ cup chopped fresh cilantro
  • ¼ cup sour cream
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon freshly grated lime zest
  • Kosher salt and freshly ground black pepper, to taste

Instructions
 

Preparation

  • Marinate the chicken: In a glass dish or resealable bag, combine olive oil, lemon juice, hot honey, lemon zest, minced garlic, and seasoning. Pour over chicken and marinate in the refrigerator for at least 30 minutes, up to overnight.

Grilling

  • Preheat the grill to its highest setting.
  • Grill the chicken for about 5 minutes on one side until grill marks appear, then flip and grill for an additional 5-6 minutes until it reaches 165°F.
  • Let the chicken rest for 5-10 minutes before serving.

Prepare the Corn Salad

  • In a large bowl, mix corn kernels, green onions, and cilantro.
  • In a smaller bowl, whisk together sour cream, lime juice, lime zest, and seasoning. Stir this dressing into the corn mixture.

Notes

For extra flavor, drizzle additional hot honey over the chicken before serving. Feel free to customize the corn salad with additional ingredients like diced bell peppers or jalapeños for added heat.
