Ingredients
  

For the marinade

  • ½ cup soy sauce imparts savory depth
  • 2 ripe mangoes, peeled and diced adds natural sweetness
  • 3 cloves garlic, minced for aromatic quality
  • ½ teaspoon fresh ginger, grated enhances flavor
  • 2 tablespoons water or more as needed for consistency

For the main dish

  • 2 lb boneless skinless chicken thighs the main protein
  • Fresh cilantro for garnish adds a fresh herbal note

Instructions
 

Preparation

  • Place chicken thighs in a large resealable plastic bag or a baking dish.
  • In a small blender, combine soy sauce, diced mangoes, minced garlic, grated ginger, and water. Blend until smooth.
  • Reserve ¼ cup of the marinade for later use.
  • Pour the remaining marinade over the chicken, seal the bag or cover the dish, and refrigerate for 2 to 8 hours.

Grilling

  • Preheat the grill to about 400°F.
  • Remove chicken from marinade and shake off excess.
  • Grill chicken for 6 to 7 minutes on each side until the internal temperature reaches 165°F.
  • Transfer chicken to a serving platter and brush with reserved marinade.
  • Garnish with fresh cilantro before serving.

Notes

Try to marinate overnight for best flavor. Serve with rice, salads, or grilled veggies.
