  • 1 lb ground beef Opt for lean ground beef for a healthier option.
  • 1 cup cooked rice Can be white or brown rice.
  • 1 can black beans Rinsed and drained.
  • 1 cup corn Can be frozen or canned.
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro Chopped.
  • 1 each avocado Sliced.
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • Dice the onion and tomatoes, chop the cilantro, and slice the avocado.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced onion to the skillet and sauté for 3 to 4 minutes until soft.
  • Add the ground beef and break it apart with a spatula. Cook for 6 to 8 minutes until browned.
  • Drain excess fat from the skillet if necessary.
  • Stir in the taco seasoning until well combined.
  • Add the black beans, corn, and diced tomatoes to the skillet and cook for another 5 minutes.

Assembly

  • Start with a layer of cooked rice in a bowl.
  • Spoon the beef mixture over the rice.
  • Top with shredded cheddar cheese, sliced avocado, and fresh cilantro.
  • Season with salt and pepper to taste and add optional toppings if desired.

Notes

Consider serving with toppings like sour cream, salsa, or pickled jalapeños for customization. Pairs well with iced tea or lemonade.
