  • 2 lbs beef chuck, cut into 1-inch cubes Opt for a well-marbled cut for tenderness.

  • 4 medium carrots, sliced Adds sweetness and color.
  • 4 medium potatoes, diced Provides heartiness.
  • 2 cups beef broth For the stew base.
  • 1 bottle (12 oz) Guinness beer Adds depth of flavor.
  • 2 tbsp tomato paste For richness.
  • 2 tsp Worcestershire sauce Enhances umami.
  • 1 tsp dried thyme Adds a fragrant note.
  • 1 leaf bay leaf To infuse flavor.
  • to taste Fresh parsley, for garnish Adds color when serving.

Instructions
 

Preparation

  • Season the beef cubes with salt and pepper.
  • In a large pot or Dutch oven, heat the olive oil over medium heat until shimmering.
  • Add the seasoned beef cubes to the pot in batches and brown on all sides, about 5 to 7 minutes.
  • Remove the browned beef from the pot and set aside.
  • In the same pot, add the chopped onion and minced garlic. Sauté for about 3 to 4 minutes until the onion is translucent.
  • Add the sliced carrots and diced potatoes. Stir for about 3 minutes.

Cooking

  • Pour in the beef broth and Guinness beer, stirring to combine.
  • Stir in tomato paste, Worcestershire sauce, dried thyme, and the browned beef.
  • Bring to a gentle boil, then reduce heat to a simmer, cover, and cook for about 2 hours.
  • Stir occasionally and check liquid levels, adding more broth if needed.
  • Once beef is tender, remove the bay leaf and adjust seasoning with salt and pepper.

Serving

  • Serve the stew hot, garnished with fresh parsley.

Notes

This stew pairs well with crusty bread and can be made ahead. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months. Reheat thoroughly before serving.
