Main Ingredients

  • 1 pound dried small butter beans Rinse thoroughly before use.
  • 1 piece ham bone with trimmings
  • 5 cups water This will create the broth.
  • 1 small onion, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon white pepper
  • 1 teaspoon salt Add at the end for balanced seasoning.

Preparation

  • Rinse the dried small butter beans thoroughly according to package instructions.
  • Add the rinsed beans to a large pot or Dutch oven.
  • Toss in the ham bone along with five cups of water.
  • Add the diced onion, garlic powder, and white pepper.
  • Bring the mixture to a rolling boil.

Cooking

  • Lower the heat to let the pot simmer gently and cover.
  • Allow to cook on low for approximately two hours.
  • After two hours, remove the ham bone and add one teaspoon of salt.
  • Continue cooking for another hour or until the beans reach desired tenderness.

Finishing Touches

  • Chop the meat from the ham bone and add back to the beans.
  • Stir to integrate the ham flavor into the dish.
  • Taste and adjust seasoning if necessary.
  • Let the beans rest uncovered for about 20-25 minutes before serving.
  • Serve Ham & Beans on its own or over a bed of fluffy rice.

Notes

For a richer broth, consider adding diced carrots or celery. If desired, soak the beans overnight to reduce cooking time and enhance tenderness.
